What Is a Whole Grain?

Whole grains are cereal grains that contain cereal germ, endosperm, and bran, in contrast to refined grains, which retain only the endosperm.  Whole grains can generally be sprouted while refined grains generally will not sprout.  Whole meal products are made by grinding whole grains in order to make whole grain flour.  Whole grains are a natural source of protein as well as a source of carbohydrates and are made into many different kinds of foods.

Is It Whole Grain?

The ingredients list is the key to identifying whole grain products.  If the words “whole meal, whole wheat, or whole corn” are listed first, it is a wholegrain product.  When you see “enriched or bromated” it is probable that it is not a whole grain product.  Normally if the first item is “wheat flour” it is not a whole grain product.  If the 2nd item is listed as a whole grain product you might be fooled into thinking it is whole grain when there could be a little as 1% in the mix. 

Be careful when buying whole grain products at the store.  One sure way to know you are getting a whole grain product is to grind your own flour or meal at home with a flour mill from Healthy Kitchen Plus.


Whole Wheat: Why Is It So Important?

The flour in most bakery products today is highly refined. In most cases it tastes good especially when it is full of sugar and other ingredients to highlight the taste. Whole wheat bakery products are in the minority and usually the only whole wheat products you find are bread, pasta and flour.

Is there any difference between whole wheat and highly refined bakery goods? Yes, there is a difference and it is substantial. Whole wheat contains endosperm, bran and cereal germ. Highly refined flour has only the endosperm that is the largest part of the grain but has the least nutrient value.

Most whole grains are a natural source of protein, fiber, iron, vitamin B, Omega 3 and Omega 6. White flour does not have these natural substances because the bran and germ are removed. Bakeries add back the nutrients they took away during the milling process to make white flour because they are required to do it by law.

The glycemic index of both whole wheat and refined flour is the same, but there is a difference in how the body reacts to these two types of flour. If grains are kept close to their original form, it slows starch digestion. When digestion is slower, it helps to prevent blood sugar spikes. Over time, it could cause insulin resistance.

Facts About Grain Mills, Grain Grinders, & Whole Grain Flour

Early wheat mills were driven by paddle wheels which were attached to a shaft that turned the millstone.  The millstone was on top of a similar sized stone that was stationary and this simple arrangement worked well in areas where water ran swiftly.  There was no gear which was good because of maintenance, but it was also a disadvantage because there was no consistency in the speed of the mill.  During the Roman Empire, they advanced to vertical wheels with some estimated at 2.4 to 3.2 tons per hour.  By 1086 in England, a census was taken and there were 5,624 water-powered flour mills.

The classical grain mill is designed to be driven by water.  Some were driven by livestock while others were driven with slave labor.  At the end of the eighteenth century, Oliver Evans revolutionized grain mills when he invented, patented and promoted a fully automated mill.

Modern mills usually use electricity to turn heavy steel or cast iron flat and serrated rollers to separate bran and germ from the endosperm.  White flour is made of the endosperm.  Many bakers still prefer the stone-ground flour because of its texture.  The bakers fear that much of the nutritional value is lost in the heat created by the metal rollers of the modern flour mills. 

The modern flour mills can produce enormous amounts of product, but in the production process, there is often lost the goodness of the whole-grain.  Whole-grain products can be found in the grocery store, but it is difficult to find what you are truly looking for in terms of texture, flavor and cost.

Types of Grain Mills and Grain Grinders

Stone Grinders:  These have been around since the beginning of milling.  Basically it is a grinding method that rubs one stone against another and the grain is cracked and made intoWolfgang Grain Millflour. Until modern technology got involved, the size of the grinding stones were two to three feet in diameter.

The home stone grain grinders of today do not have the traditional stone, but it is a modern version of an old technology.  Depending on the manufacturer, several different types of stones are used.  It doesn’t necessarily matter because these new materials are incredibly hard and resilient. 

Stone milling can be adjusted to different settings from fine flour to cracked wheat. 

A stone grain mill is not good for oily or wet grains.
