Buckwheat: The Grain That is Considered a FruitBuckwheat is technically a fruit. It is hard to believe that this very hardy plant, which is famous for its buckwheat pancakes, is a fruit rather than a cereal, but that is what the scientist tell us. Even though it is a fruit, we are going to talk about it as though it is a cereal grain because it acts like and eats like a grain. It has not been cultivated for many years, maybe a thousand years, but it is old enough to have a following. Russia is probably where it is most popular because it will grow in very poor soil and can withstand the severe winters without dying. It is also resists too much or too little rain. Buckwheat has an inner seed that is known as groat which is soft and easy to chew. It is protected from an outer hull that is very thick and hard. Whole grain buckwheat is an extremely nutritious food and contains eight essential amino acids. It also contains a small amount of protein or approximately ten percent protein. Buckwheat is also a good source of linoleic acid which is one of two essential fatty acids. It has many of the B vitamins plus phosphorus, iron copper, zinc, manganese, and magnesium. Despite the good things about this grain, it has some fats that react to air. If Buckwheat must be stored, it has to be stored in an air-tight container in order to keep it from becoming rancid. Buckwheat flour can be mixed with whole wheat flour to make some really great recipes for breads, cakes, biscuits, muffins and rolls. Commercially, buckwheat flour is mixed with other flours to make hot cereals, soups, pancake mixes, and breads. In the Orient, buckwheat is used to make sorba noodles. In Russia, the seeds, or groat, are toasted and eaten and is known as kasha. The buckwheat grain has a very distinct flavor of its own. It is rich and pleasant to the taste. Mixing one-half buckwheat and whole wheat flour yields flour that is closer to man's dietary needs than beef. This fruit, or rather grain, is an extremely nutritious food for man. In addition it is nutritious for honey bees that love it and feed off of buckwheat to make a deep, buttery style of honey that many people love. It is rare to find food that is quite as nutritious as this one. It has so much to give us in terms of vitamins and minerals and as we stated before, when mixed with whole wheat flour in equal proportions it is very close to the same nutrition profile as beef without having to eat the beef. So if you are watching your beef intake, this grain is something to consider. Buckwheat is hard to find in bakery products even in health food stores. That is why a home grain mill can be a great thing to have when you know you want the best for yourself and your family.
